Fødevaremigræne er en intolerance og det er stoffer som tyramin, phenylethylamin (PEA), histamin og octopamin, der kan udløse migræne. De mennesker, der reagerer på bestemte madvarer får migræne, da de ikke kan nedbryde de nævnte kemiske stoffer hurtigt nok til at undgå, at stofferne udløser et migræneanfald. Stofferne findes f.eks. i surdejsbrød (tyramin), chokolade (PEA), spinat (histamin) og citrusfrugter (octopamin).

Også kemiske tilsætningsstoffer som f.eks. citronsyre (E330) og aspartam (E951) er kendte fødevaretriggere. Du kan læse mere om kost og migræne her.

Chokolade og kakao

Årsagen til, at mange får migræne af chokolade og kakao er stoffet phenylethylamin (PEA). Både kakao og chokolade er ofte ingredienser i både slik, kiks og færdigkøbte kager. Fedtreduceret kakao derimod regnes som værende migrænesikker (hvilket betyder, at du kan spise det uden, at få migræne). PEA sidder nemlig i kakaofedtet.

Fedtreduceret kakao finder du i for eksempel i O’boy kakaopulver (2,7 g kakao/100g), Oreocookies (4,7 g kakao/100g) og is. Der er ingen faste grænser for, hvornår det kaldes fedtreduceret kakao.

Når du vil undersøge, om du trigges af f.eks. phenylethylamin (PEA), skal du være grundig. For spiser (eller drikker) du bare én ting med PEA, får du migræne, hvis det er en trigger for dig. Det er altså ikke nok at udelukke chokolade, hvis du får migræne af stoffet phenylethylamin. Du skal udelukke alle fødevarer, der indeholder PEA. Citronsyre (E330)
Citronsyre findes både naturligt i citrusfrugter og som kemisk tilsætning i form af E330. Det bruges til at konservere madvarer, så de kan holde sig. Citronsyre (E330) finder du i slik, is, desserter og syltetøj, nu vi snakker om søde sager.

Aspartam (E951)
Aspartam er et kunstigt sødemiddel, som du sikkert kender. Det er i f.eks. sukkerfrit slik, sodavand og saft.

Kort fortalt er der altså en del stoffer i henholdsvis slik, kiks, færdigkøbte kager etc., som kan trigge migræne. Det du kan gøre er at lave dit eget guf. Du kan f.eks. bage en kage (se opskriften på æbletærte) eller lave dit eget juleslik. I dag får du opskriften på eiskonfekt og tanken er, at du kan bage æbletærten, hvis du ikke tåler chokolade. Hjemmelavet eiskonfekt (ca. 30 stk.)
De her eiskonfekt smager så meget bedre, end dem man køber færdigt! Sukkerindholdet er desuden lavere, når du bruger chokolade med 70% kakaoindhold.

Du skal bruge:
100 g kokosolie
100 g mørk chokolade, gerne med mintsmag eller appelsinsmag
Små metalforme (se billede)

1. Smelt kokosolien i en kasserolle. Knæk chokoladen i mindre stykker og lad den smelte sammen med kokosolien under omrøring.

2. Hæld op i formene (vær forsigtig, det er varmt!) og lad det stivne i køleskabet.
